Aroma: The aroma of sauce is prominent, and upon careful examination, the aroma of burnt, the aroma of cellar bottom, and the aroma of flowers and fruits are revealed in sequence.
In the mouth: The wine reacts with salivary enzymes to produce sweet amino acids, neutralizing the stimulation of alcohol. The middle part presents a nutty roasted aroma. The slightly bitter aftertaste comes from the moderate precipitation of tannins, which forms a layered progression with the aftertaste.
Empty cup: After leaving the empty cup for 12 hours, the aroma of grain and yeast can still be detected.
Brewing process
Strictly follow the "12987" traditional process system, complete 2 feedings, 9 steamings, 8 fermentations, and 7 wine extractions within a 1-year production cycle, adopt a graded wine extraction process, and only select 3-5 rounds of high-quality base wine for blending. The base wine needs to be stored in pottery jars for 5 years.
Product Features
The aroma of grass exists but is weak. The sourness can be felt at the beginning, the sweetness is not obvious, the aftertaste is bitter, and the aroma of the sauce is not strong enough; the sourness and astringency of the second bite are relatively obvious, and the bitterness of the aftertaste is lighter than the first bite. The burnt aroma exists, the overall taste is relatively heavy, the five flavors are relatively coordinated, and the saturation is acceptable.
